Quicke Italiano
- 1/2 c. milk
- 1/2 c. prepared biscuit mix
- 3 eggs
- 1/4 c. butter, melted
- dash of pepper
- 1/2 c. thinly sliced pepperoni
- 3 Tbsp. chopped green pepper
- 2 Tbsp. chopped onion
- 2 1/2 oz. sliced mushrooms, drained (small can)
- 1 Tbsp. butter
- 1/2 tsp. oregano
- 1/4 c. shredded Mozzarella cheese
- Mix milk, biscuit mix, eggs, butter and pepper in blender for 15 seconds.
- Pour into greased 9-inch pie pan.
- In small skillet, cook pepperoni, green pepper, onion and mushrooms in butter until tender.
- Stir in oregano.
- Add pepperoni mixture into pan (with biscuit mixture) and then add 1 cup of Mozzarella to mixture. Bake for 25 to 30 minutes at 375u0b0.
- Sprinkle remaining 1/4 cup of Mozzarella onto top of quiche and bake for 2 minutes longer.
- Let stand for 5 minutes before serving.
- Yields 4 to 6 servings.
