Sweet And Sour Cabbage
- 4 oz. sliced bacon, cut into 1/2-inch pieces
- 1 1/2 c. chopped onion
- 1 clove garlic, finely chopped
- 8 c. coarsely chopped cabbage (about 1 1/2 lb.)
- 1 Tbsp. sugar
- 5 Tbsp. distilled white or cider vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Cook bacon in large skillet until crisp and golden brown, stirring often.
- Remove with slotted spoon to paper toweling to drain.
- Pour off all but 2 tablespoons of the bacon fat.
- Add onion and garlic to skillet.
- Saute until softened, about 2 minutes.
- Add cabbage.
- Cook, uncovered, over low heat, stirring often, for 15 minutes.
- Add half the bacon.
- Cook 15 minutes longer or until cabbage is tender.
- Stir in sugar, vinegar, salt and pepper. Transfer cabbage to serving plate.
- Sprinkle with remaining bacon.
