Monster Chip Cookies
- 1 c. shortening
- 1/2 c. butter or margarine, softened
- 1 1/3 c. sugar
- 1 c. packed brown sugar
- 4 eggs
- 3 tsp. vanilla
- 1 tsp. lemon juice
- 3 c. flour
- 1 1/2 tsp. salt
- 2 tsp. baking soda
- 1/2 c. Quick-Cooking oats
- 1 tsp. cinnamon
- 4 c. (24 oz.) semi-sweet chocolate chips
- 2 c. pecans or walnuts
- In large mixing bowl, cream shortening, butter and sugar until light and fluffy (about 5 minutes).
- Add eggs one at a time, beating each well.
- Add vanilla and lemon juice. Combine flour, oats, baking soda, salt and cinnamon.
- Add to creamed mixture. Mix well.
- Stir in chips and nuts.
- Drop by 1/4 c. three inches apart on lightly greased baking sheet.
- Bake at 350u0b0 for 14-16 minutes or until lightly browned and set in center.
- Cool two minutes before removing to wire rack.
