Beef, Pepper And Mushroom Kabobs
- 1 lb. boneless beef top sirloin, cut 1/4-inch thick
- 1 medium green pepper, cut in 1 1/4-inch pieces
- 2 Tbsp. olive oil
- 2 tsp. Dijon style mustard
- 1/2 tsp. dried oregano leaves, crushed
- 12 large mushrooms
- 1 Tbsp. lemon juice and water
- 1 tsp. honey
- 1/4 tsp. pepper
- salt
- Trim excess fat from steak; cut steak into 1 1/4-inch pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in large bowl.
- Add beef, bell pepper and mushrooms, turning to coat.
- Alternately thread beef, bell pepper and mushrooms on each of four 12-inch metal skewers.
- Place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 9 to 12 minutes for rare to medium, turning occasionally. Season with salt, if desired.
