Apple Dumpling Cake
- 1 1/2 c. chopped apples
- 1 c. raisins
- 1 package Applesauce or spice cake mix
- 1/2 c. water
- 1/2 c. margarine, softened
- 1/3 c. dairy sour cream
- 3 eggs
- 2 c. water
- 1/2 c. brown sugar, packed
- whipped topping
- Grease bottom of 9 x 13 pan.
- Spread apples and raisins evenly over bottom of pan.
- In large bowl combine cake mix, 1/2 c. of water, margarine, sour cream and eggs at low speed until moistened. Beat 2 minutes at highest speed.
- Spoon batter over fruit.
- In small saucepan, heat 2 cups water and brown sugar to boiling.
- Pour over batter.
- Bake at 350 degrees for 40-50 minutes or until toothpick inserted comes out clean.
- Serve warm inverted with a dollop of cream topping.
- To warm:
- cover pan with foil and heat at 350 degrees for 12-15 minutes.
