Keiv Chicken(Russia)
- 4 boneless skinless chicken breasts
- 1/3 cup white wine
- 1/3 cup green onion chopped
- 1/3 cup parsley chopped
- 2/3 cup dry bread crumbs
- 3/4 cup butter
- 4 Tbsp. Parmesan cheese, grated
- 1 1/2 tsp. basil
- 1 tsp. garlic salt
- Preheat oven to 375F.
- In a 2 quart saucepan, melt butter. In a small pie pan, combine bread crumbs, parmesan cheese, basil, and garlic salt.
- Mix well.
- Dip chicken breast in melted butter then roll into bread crumbs to coat.
- Place chicken in a lightly greased baking dish.
- Bake for 50-60 minutes or until done.
- While chicken is baking, add wine, onion, and parsley to remaining melted butter.
- When chicken is golden brown, pour butter sauce over and around chicken.
- Return to oven, bake for 5 minutes more or until sauce is hot.
- Serve with wild rice.
