Black Bean And Rice Bake
- 2 tsp. olive oil
- 1 1/2 c. chopped onion
- 3 garlic cloves, minced
- 1/2 c. chopped red bell pepper
- 1 (4 oz.) can diced green chiles
- 1 c. crushed, drained canned tomatoes
- 1 Tbsp. lime juice
- 1 1/2 to 2 tsp. chili powder
- 3/4 tsp. salt
- 16 oz. drained, cooked black beans
- 2 c. cooked brown rice
- 4 oz. Cheddar or Jack cheese
- Preheat
- oven
- to
- 350u0b0.
- Heattil
- in
- heavy,
- large, nonstick
- skillet
- over
- medium
- heat.
- Add
- onion and garlic; saute 8
- to 10 minutes until tender.
- Add bell pepper; saute 3 minutes.
- Stir in tomatoes, lime juice, chili powder and salt; bring to
- a boil.
- In a 2-quart casserole, mix beans and rice. Pour in
- tomato
- mixture and stir to combine.
- Sprinkle casserole with cheese.
- Bake 10 to 15 minutes until hot and bubbly. Healthy. Makes 4 servings.
