Black Bean And Rice Bake

  1. Preheat

  9. skillet

  11. medium
  12. heat.
  13. Add
  14. onion and garlic; saute 8
  15. to 10 minutes until tender.
  16. Add bell pepper; saute 3 minutes.
  17. Stir in tomatoes, lime juice, chili powder and salt; bring to
  18. a boil.
  19. In a 2-quart casserole, mix beans and rice. Pour in
  20. tomato
  21. mixture and stir to combine.
  22. Sprinkle casserole with cheese.
  23. Bake 10 to 15 minutes until hot and bubbly. Healthy. Makes 4 servings.
