Low-Fat Honey-Lemon Cake
- vegetable cooking spray
- 1 3/4 c. plus 1 tsp. all-purpose flour, divided
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. sugar
- 1 tsp. grated lemon rind
- 1/2 c. plus 2 Tbsp. skim milk
- 1/4 c. vegetable oil
- 1/4 c. nonfat sour cream alternative
- 3 Tbsp. honey
- 1 tsp. lemon extract
- 3 egg whites
- 1/4 c. sifted powdered sugar
- 1 1/4 tsp. lemon juice
- Coat a loaf pan with cooking spray.
- Dust pan with 1 teaspoon flour; set aside.
- Combine remaining 1 3/4 cups flour and next 4 ingredients in a large bowl.
- Combine milk and next 4 ingredients in a small bowl, stirring well.
- Add to flour mixture and beat at medium speed of an electric mixer until smooth.
