Enchiladas
- 8 flour tortillas
- 1 large onion, chopped
- 1 lb. ground chuck
- 1 can chili without beans
- 1/2 tsp. salt
- pepper to taste
- 1 tsp. chili powder
- red pepper (optional)
- 1/2 lb. grated cheese
- additional chopped onion
- 1 can El Paso enchilada sauce (optional)
- Saute
- onion
- and
- ground
- meat until meat is brown and onions are tender.
- Add chili and seasonings.
- On each tortilla, put a small amount
- of
- meat
- mixture,
- cheese
- and onion. Roll up and place in
- baking
- dish.
- Pour remaining meat sauce on top, more onion and top
- with
- cheese.
- Bakett 350u0b0 until cheese melts or if sauce seems
- too dry or there is not enough to cover the tortillas, use a can of El Paso enchilada sauce.
