Soft Raisin Cookies
- 1 c. water
- 2 c. raisins
- 1 c. shortening
- 1 3/4 c. sugar
- 2 eggs, slightly beaten
- 1 tsp. vanilla extract
- 3 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 tsp. cinnamon
- 1/2 c. chopped walnuts
- Combine raisins and water in a small saucepan; bring to a boil.
- Cook for 3 minutes.
- Remove from heat and let cool.
- (Do not drain.)
- In mixing bowl, cream shortening.
- Gradually add sugar. Add eggs and vanilla.
- Combine dry ingredients.
- Gradually add to creamed mixture and blend thoroughly.
- Stir in nuts and raisins. Drop by teaspoonfuls 2-inches apart on greased baking sheets.
- Bake at 350u0b0 for 12 to 14 minutes.
- Yield: About 6 dozen cookies.
