Dried Peach Roll
- 2 c. sifted plain flour
- 3/4 c. baking powder
- 1 tsp. salt
- 3/4 c. sweet milk
- ball of shortening size of large egg
- Dried peaches, cooked and mashed, sweetened to taste
- Sift flour, baking powder and salt together.
- Cut in shortening and add milk to make a dough.
- Roll out on a well floured board or pastry cloth.
- Roll dough to 18 inches long and 12-13 inches wide.
- Spread sweetened peaches to within 1/2 inch of the edge.
- Cut up 1/2 stick of margarine and place on top of peaches.
- Roll up 1/2 of dough from one side and then roll up to meet and pinch together.
- Seal ends.
- Bake until brown in a well greased cobbler pan large enough to hold the sauce.
- After it is baked, add 3/4 stick of margarine, 1-1/4 cup sugar,
- 1-1/4 cup water.
- Put back in oven and let boil 8-10 minutes.
