Sweet Potato Casserole

  1. Coat a 1 1/2-quart casserole dish with nonstick cooking spray. Layer sweet potatoes in dish; sprinkle onion evenly over top. Melt margarine and add milk, salt and pepper; pour evenly over potatoes.
  2. Sprinkle parsley and Parmesan cheese over potatoes. Bake, covered, for 1 1/2 hours at 325u0b0.
  3. Turn heat up to 375u0b0; remove lid and allow cheese to turn light brown before removing from oven.
  4. Serves 6 (1/2 cup servings).
  5. Each serving contains 137 calories, 3.5 g protein, 3 g fat, 2.6 mg chol. and 69 mg sodium.
