Sweet Potato Casserole
- 4 c. peeled sweet potatoes, thinly sliced
- 1 Tbsp. fresh onion, chopped
- 1 1/2 Tbsp. diet margarine
- 1/2 c. milk
- 1/4 tsp. lite salt
- 1/4 tsp. pepper
- 1 Tbsp. fresh parsley
- 2 Tbsp. grated Parmesan cheese
- Coat a 1 1/2-quart casserole dish with nonstick cooking spray. Layer sweet potatoes in dish; sprinkle onion evenly over top. Melt margarine and add milk, salt and pepper; pour evenly over potatoes.
- Sprinkle parsley and Parmesan cheese over potatoes. Bake, covered, for 1 1/2 hours at 325u0b0.
- Turn heat up to 375u0b0; remove lid and allow cheese to turn light brown before removing from oven.
- Serves 6 (1/2 cup servings).
- Each serving contains 137 calories, 3.5 g protein, 3 g fat, 2.6 mg chol. and 69 mg sodium.
