Oatmeal-Chocolate Chip Cookies
- 2 1/2 c. regular oats, uncooked
- 1 c. margarine, softened
- 1 c. sugar
- 2 eggs
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1 (12 oz.) pkg. semi-sweet chocolate morsels
- 1 c. firmly packed brown sugar
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 c. chopped pecans
- 3 (1.5 oz.) milk chocolate bars, grated
- Place oats in container of electric blender or food processor; process until finely ground; set aside.
- Beat butter in a large bowl at medium speed of an electric mixer; gradually add sugars, beating well.
- Add eggs and vanilla, mixing well.
- Combine ground oats, flour, soda, baking powder and salt; gradually add to creamed mixture, mixing well.
- Stir in chocolate morsels, grated chocolate and pecans.
- Drop dough by level tablespoonfuls onto greased cookie sheets.
- Bake at 375u0b0 for 8 to 10 minutes or until lightly browned. Cool slightly.
- Remove to wire rack and cool completely.
- Yields 7 dozen.
