End-Of-The-Month Casserole
- 8 oz. lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 small head cabbage, shredded
- 2 carrots, peeled and sliced thin
- 2/3 c. quick cooking rice
- 1 (13 oz.) reduced-sodium tomato soup
- 1 1/2 c. water
- 1/2 tsp. black pepper
- 1 tsp. ground cumin or more to taste
- Brown ground beef in a skillet with onion and garlic.
- Drain well.
- Combine with cabbage, carrots, rice, soup, water, pepper and cumin in a 3-quart casserole dish.
- Bake in 350u0b0 oven, covered, for an hour.
- Or cover dish with plastic wrap and cook on High (100%) power in microwave oven for 15 to 20 minutes, stopping twice to stir.
- The casserole is done when cabbage and carrots are tender.
- Makes 4 to 5 servings.
