Artichoke Relish
- 1 peck artichokes
- 8 large onions
- 12 green bell peppers
- 6 red bell peppers
- 3 qt. white vinegar
- 1/2 box mustard seed
- 1/2 box celery seed
- 5 to 6 c. sugar
- 1 c. flour
- 3 Tbsp. turmeric
- 3 Tbsp. dry mustard
- 2 tsp. cinnamon
- 1 tsp. black pepper
- Wash and grind artichokes.
- Cover with 3/4 cup salt.
- Let stand 30 minutes.
- Grind onions and peppers.
- Bring vinegar to a boil and add mustard seed and celery seed.
- Boil 15 minutes.
- Mix sugar, flour, turmeric, dry mustard, cinnamon and black pepper. Add a little water to make a paste.
- Add enough hot vinegar to dissolve.
- Add gradually to hot vinegar.
- Boil 15 minutes. Squeeze salt from artichokes.
- Combine artichokes, onions and bell peppers to vinegar mix.
- Bring to a boil.
- Put in hot sterilized jars and seal.
- Makes 17 to 18 pints.
