Artichoke Relish

  1. Wash and grind artichokes.
  2. Cover with 3/4 cup salt.
  3. Let stand 30 minutes.
  4. Grind onions and peppers.
  5. Bring vinegar to a boil and add mustard seed and celery seed.
  6. Boil 15 minutes.
  7. Mix sugar, flour, turmeric, dry mustard, cinnamon and black pepper. Add a little water to make a paste.
  8. Add enough hot vinegar to dissolve.
  9. Add gradually to hot vinegar.
  10. Boil 15 minutes. Squeeze salt from artichokes.
  11. Combine artichokes, onions and bell peppers to vinegar mix.
  12. Bring to a boil.
  13. Put in hot sterilized jars and seal.
  14. Makes 17 to 18 pints.
