Bran Muffins
- 6 c. or 1 box of 100% Bran Cereal, divided
- 2 c. boiling water
- 1 c. margarine or shortening
- 3 c. white sugar
- 4 eggs
- 4 c. (1 qt) buttermilk
- 5 c. flour
- 5 tsp. soda
- 2 - 10-biscuit tubes of buttermilk refrigerator biscuits
- 2 Tbsp. cinnamon
- 1-1/2 c.? white sugar
- 1 stick? butter or margarine
- 2 c.? powdered sugar
- 1 Tbsp.? milk
- Few drops vanilla (optional)
- Mix white sugar with cinnamon. Melt butter. Roll biscuits individually in butter, then cinnamon & sugar and place in baking pan (a metal gelatin ring mold works very well).
- Bake around 20 minutes at 350 degrees and check. You may want to turn out onto another baking sheet so that it finishes baking evenly.
- Add powdered sugar gradually to any left over melted butter (melt more if needed). Add milk and vanilla as desired to make frosting. Apply thick frosting to hot biscuits; it will thin some as it melts.
- Garnish with maraschino cherries if you want!
