Special Sweet Potato Casserole
- 8 medium cooked sweet potatoes, mashed
- 1 tsp. salt
- 1/4 tsp. mace
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1 large egg, slightly beaten
- 1/2 stick margarine, melted
- 3 Tbsp. orange juice
- 3/4 c. finely chopped peanuts, divided
- 1/2 c. flaked coconut
- 1/4 c. brown sugar
- Combine
- sweettotatoes
- with next 8 ingredients.
- Add 1/4 cup peanuts, finely chopped.
- Place in a 2 quart casserole and bake at 400u0b0 for 25 minutes.
- Combine coconut, brown sugar and remaining
- peanuts (1/2 cup).
- Sprinkle over top of sweet potato mixture
- and
- bake approximately 10 minutes longer, or until lightly browned.
- Makes about 6 to 8 servings.
