Spice Cake
- 2 1/2 c. cake flour
- 2 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1/4 tsp. each: mace, cloves and nutmeg
- 1/2 tsp. allspice
- 1 tsp. cinnamon
- 1 c. shortening
- 1 c. brown sugar, firmly packed
- 2 eggs
- 1 c. thick sour milk
- Sift flour with spices, salt, baking powder and soda.
- (You can use a whisk.)
- Cream shortening and sugar together until light and fluffy.
- Add eggs, beating well after each addition.
- Add flour mixture alternately with thick sour milk to creamed butter and sugar mixture.
- Beat thoroughly.
- Bake in a well-greased 9 x 13-inch pan for 45 to 50 minutes in a 350u0b0 oven.
- Let cake stand in pan while preparing icing.
- Broiled Coconut Icing on this is very good.
