Chicken Casserole
- 1 (2 1/2 to 3 lb.) chicken
- 1 pkg. Stove Top stuffing
- 1 stick margarine, melted
- 1 c. chicken broth (use broth from chicken)
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. mayonnaise
- 1 tsp. salt
- 2 eggs, beaten
- 1 1/2 c. milk
- 1 can mushroom soup
- Cook chicken.
- Bone and chop.
- Mix stuffing.
- Mix melted oleo and chicken broth.
- Spread stuffing mix in a large greased pan or casserole.
- Mix chicken, onion, celery and mayo.
- Spread chicken mixture on top of dressing.
- Cover with remaining stuffing.
- Beat eggs and add milk and pour this over entire casserole.
- Spread 1 can mushroom soup on top.
- Bake at 350u0b0 for 30 to 40 minutes.
- May be made and refrigerated overnight.
