Carrot Cake(Family Favorite)
- 2 c. all-purpose flour
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1 1/2 c. vegetable oil
- 1 tsp. vanilla
- 1 c. shredded coconut
- 2 c. sugar
- 1 tsp. baking soda
- 3 eggs
- 2 c. carrots, finely grated
- 1 c. well-drained crushed pineapple
- 1 c. nuts, chopped
- In mixing bowl, combine dry ingredients.
- Add eggs, oil, carrots and vanilla; beat until combined.
- Stir in pineapple, coconut and 1/2 cup nuts.
- Pour into greased and floured 9 x 13 x 2-inch baking pan.
- Bake at 350u0b0
- for 50 to 60 minutes, or until cake tests done.
- Cool.
- Frost with cream cheese frosting and sprinkle with remaining 1/2 cup nuts.
- Store in refrigerator. Works well for this altitude.
