Carrot Cake(Family Favorite)

  1. In mixing bowl, combine dry ingredients.
  2. Add eggs, oil, carrots and vanilla; beat until combined.
  3. Stir in pineapple, coconut and 1/2 cup nuts.
  4. Pour into greased and floured 9 x 13 x 2-inch baking pan.
  5. Bake at 350u0b0
  6. for 50 to 60 minutes, or until cake tests done.
  7. Cool.
  8. Frost with cream cheese frosting and sprinkle with remaining 1/2 cup nuts.
  9. Store in refrigerator. Works well for this altitude.
