Chicken In Green Sauce-Guatemala(Jocon)
- 6 boneless, skinless chicken breasts
- 4 cups of water
- 1 tsp. salt
- 2 tortillas, sliced
- 1 Tbsp. squash seeds
- 1 cup cilantro, fresh
- 1/2 cup sesame seeds
- 1 cup green onions chopped, green part only
- 1/2 cup sliced tomatillos
- 1 1/2 tsp. hot green chiles
- 1 Tbsp. corn oil
- Rice, optional
- Cook chicken in the water with 1 tsp. of salt in a covered pot, about 30 minutes, or until chicken is soft.
- Remove chicken and set aside.
- Save broth and soak tortillas in in it.
- Toast sesame seeds and squash seeds in a skillet until they lightly brown.
- In a food processor, grind the seeds. add the cilantro, green onions, hot chiles, tomatillos and 1 cup of the broth.
- Add the tortillas and process into a smooth paste.
- Brown the chicken in a lightly oiled pan for 5 minutes over medium heat.
- Add the paste mixture and the remaining broth, about 2 cups.
- Simmer over low heat for 15 minutes until the sauce is reduced to a thick, rich, green consistency. Serve over rice if desired.
- Makes 4-6 servings.
