Buffet Sandwich Tray
- 1 (6 oz.) cream cheese, softened
- 1/3 c. mayonnaise
- 1 1/2 tsp. mustard
- salt and pepper
- 1 small can black olives, sliced and drained
- 2 hard-cooked eggs
- 1 (7 oz.) can chunk ham, drained
- 1 tomato, peeled and chopped
- 1 (7 oz.) can chunk chicken
- 4 green onions, sliced
- white and whole wheat bread slices
- Cream first 3 ingredients in bowl.
- Add salt and pepper. Spread 1/2-inch thick in center of large platter.
- Arrange following ingredients in strips on cream cheese mixture: olives, sieved egg whites topped with sieved egg yolks, ham, tomato, chicken and green onions.
- Chill until serving time.
- Arrange bread around edge of platter just before serving.
- Yield: 10 to 12 servings.
- May substitute crabmeat and tiny shrimp.
