Chicken-Rice Magnifique
- 6 boneless chicken breasts
- 4 Tbsp. butter
- 1/2 tsp. salt
- dash of black and red pepper
- 1 c. carrots, shredded
- 1/2 c. green onions, sliced
- 1/2 c. chopped parsley
- 1 c. long grain rice, raw
- 3 c. chicken broth
- dash of Tabasco
- 2 slices bacon, quartered
- In skillet, brown chicken in butter after liberally seasoning them with salt and pepper.
- Remove and set aside.
- In same skillet cook carrots, onions and parsley until tender, stirring frequently. Add raw rice and stir until well mixed; add chicken broth, salt, pepper and Tabasco.
- Pour mixture into greased oblong casserole and top with chicken.
- Sprinkle with additional salt and pepper if needed and place bacon on top of chicken.
- Cover and cook at 325u0b0 for 1 1/4 hours or until chicken is tender.
- Remove bacon slices before serving.
- Delicious main dish!!
