Chicken Supreme
- 2 boiled chickens, boned
- 2 (6 oz.) cans mushrooms, sliced (reserve juice)
- 1 (7 oz.) can pimento, chopped
- 1 c. finely chopped onion
- 1/4 c. flour
- Chinese noodles
- 1 c. fat-free mayonnaise
- milk *
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. garlic salt
- 1/4 c. slivered almonds
- In very large mixing bowl, place chicken (cut into pieces), sliced mushrooms (reserving juice), pimento and onion.
- (*Add enough milk to mushroom juice to make 1 1/2 cups liquid.)
- Stir into mayonnaise together with seasonings.
- Add to chicken and toss lightly.
- Pour into large ungreased baking tin or casserole. Cover.
- Bake at 375u0b0 for about 45 minutes.
- Serve on hot, toasted Chinese noodles; top with toasted almonds.
- Serves about 16.
