Spinach Pie
- 1 (9-inch) pie shell (frozen deep dish)
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/4 c. finely chopped onion
- 1 c. (4 oz.) shredded Swiss cheese
- grated Parmesan cheese
- 3 eggs
- 2/3 c. evaporated milk
- 1/8 tsp. salt
- cayenne pepper
- Prick pie shell with fork.
- Bake pie shell in conventional oven until golden brown.
- In 1-quart microwave-safe dish, cook spinach, covered with plastic wrap.
- Cook on High for 6 minutes, stirring 1 time.
- Drain thoroughly.
- Layer half spinach mixture and cheese in bottom of pie shell.
- Repeat layers.
- Beat together eggs, milk, salt, nutmeg and cayenne pepper.
- Pour over spinach mixture. Sprinkle with Parmesan cheese.
- Bake at 350u0b0 for 15 to 20 minutes. Let stand 10 minutes before serving.
