Four Bean Spicy Salad
- 1 (15 1/2 ounce) can black beans
- 1 (15 1/2 ounce) can kidney beans
- 1 (15 1/2 ounce) can navy beans
- 1 (15 1/2 ounce) can cannellini beans
- 1 cup chopped celery
- 1/2 cup chopped red onion
- 1 cup chopped tomato
- 1/4 cup finely chopped jalapeno (optional)
- Dressing
- 3/4 cup red wine vinegar
- 1/4 olive oil
- 1 tablespoon lemon juice
- 2 crushed garlic cloves
- 2 tablespoons sugar
- 2 teaspoons salt
- 1/2 teaspoon chili powder
- 1 teaspoon cilantro leaf
- Drain the beans.
- Combine all dressing ingredients with an Emersion blender.
- Combine all ingredients and let marinate at least 1 hour or longer.
