Almond Pimento Spread
- 1 c. water
- 4 Tbsp. agar flakes
- 1 c. blanched almonds
- 1/4 c. pimento (fresh, canned or frozen)
- 3 Tbsp. flake yeast
- 1 tsp. salt
- 1 tsp. onion powder
- 1/4 tsp. garlic powder
- 1/4 tsp. dried dill (optional)
- 1/4 c. oil (optional)
- 3 Tbsp. lemon juice
- Bring to a boil the agar flakes and water, stirring constantly, until agar is dissolved.
- Set aside.
- Blend almonds with a little of the agar water and when the almonds are blended to a creamy texture, add the rest of the ingredients.
- If using oil, add slowly while blending.
- Stop occasionally and scrape sides.
- Add the lemon juice to the mixture while still blending. Pour into plastic containers and refrigerate.
- (Margarine containers are good.)
- Makes 2 cups.
- Refrigerate.
- Will become firm, but spreadable.
