Holiday Fruitcake
- 6 eggs
- 4 c. sugar
- 6 c. flour (Wondra)
- 4 sticks butter (1 lb.)
- 1 lb. blanched almonds, chopped
- 1 lb. pecans, chopped
- 1 lb. tropical fruit, diced
- 1 lb. glace cherries, diced
- 1 lb. glace pineapple, diced
- 1 lb. pitted dates, cut up
- 1 lb. yellow raisins
- 2 coconuts, ground fine
- 2 tsp. baking soda
- 2 tsp. cream of tartar
- 2 tsp. vanilla
- 1 tsp. salt
- 1 qt. buttermilk
- 1 1/2 c. bourbon
- Cream butter and sugar, then add eggs and flour with salt, cream of tartar, baking soda and buttermilk.
- Alternate flour and buttermilk mixing well.
- Add bourbon, vanilla, nuts, fruit and then coconut, mixing after each addition.
