Fudgy Chocolate Butterscotch Cupcakes
- 1 cup unsweetened applesauce
- 1/4 cup white sugar (splenda) or 1/4 cup sugar substitute (splenda)
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 3/4 cup whole wheat flour
- 1/3 cup cocoa powder (Hershey's 100% Cocoa Special Dark)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 dash salt
- 1/8 teaspoon cinnamon
- 1/2 cup butterscotch chips
- Fill cupcake tin with cupcake liners. Preheat over to 350u0b0F.
- Mix apple sauce, sugars, vanilla, beat in egg.
- In a separate bowl mix flour, cocoa, baking powder, baking soda, salt, cinnamon.
- Add flour mixture to wet mixture a little at a time, stir in butterscotch chips.
- Spoon batter into cupcake liners.
- Bake for about 20 minutes or until tops are firm to touch.
- Dust with powdered sugar if desired.
