German Chocolate Cake
- 1 (4 oz.) pkg. Baker's German's sweet chocolate
- 1/2 c. boiling water
- 1 tsp. baking soda
- 1 c. (2 sticks) butter
- 4 egg yolks
- 1 c. buttermilk
- 2 1/4 c. flour
- 1/2 tsp. salt
- 2 c. sugar
- 1 tsp. vanilla
- 4 egg whites, stiffly beaten
- Melt chocolate in boiling water; cool.
- Sift flour, soda and salt.
- Add egg yolks, one at a time, beating after each.
- Blend in vanilla and melted chocolate.
- Add flour mixture alternately with buttermilk, beating after each addition.
- Fold in egg whites. Pour into three 9-inch layer pans, lined on bottom with waxed paper and greased.
- Bake at 350u0b0 for 30 to 35 minutes or until cake springs back when lightly pressed in center.
- Cool in pans for 15 minutes.
- Remove and cool on rack.
- Spread coconut-pecan frosting between layers and on top and sides of cake.
