Honey Beef
- 12 oz. lean beef round steak, thinly sliced
- 1 large red pepper, cut into thin strips
- 1 c. shredded fresh spinach
- 3 green onions, cut into 1/2-inch diagonal pieces
- 1 medium parsnip, cut into thin strips (about 4 oz.)
- 1 Tbsp. vegetable oil, divided
- 1 clove garlic, minced
- 2 tsp. grated fresh or 1 tsp. ground ginger
- 1/2 c. reduced-salt soy sauce
- 2 tsp. honey
- 2 tsp. cornstarch
- In large skillet over medium-high heat, cook sliced beef, red pepper, spinach, green onions and parsnip in 2 teaspoons hot oil, stirring constantly, 2 to 3 minutes until meat is brown.
- Remove from skillet; keep warm.
- In same skillet in remaining, 1 teaspoon oil, cook garlic and ginger 1 minute.
- In small bowl, stir well soy sauce, honey, cornstarch and 2 tablespoons cold water.
- Return meat and vegetable mixture to skillet.
- Add soy sauce mixture. Cook 1 to 2 minutes until heated through and thickened.
