Chicken Mole
- 2 whole chickens, cut up
- 2 Tbsp. shelled pumpkin seeds
- 2 Tbsp. sesame seed
- ground black pepper to taste
- 2 garlic cloves
- 6 or 7 dry red "Ancho" peppers
- 1 Tbsp. or more corn oil
- 1 corn tortilla
- Cook the chickens in just enough water to cover them.
- Saute the sesame seed in a little oil, with tortilla.
- Boil some water; turn heat off and soak red peppers for 15 minutes.
- When peppers are soft, drain them.
- In a blender, put the peppers, the pumpkin and sesame seed, black pepper, garlic cloves and the toasted tortilla.
- Heat 1 tablespoon corn oil in a pot and transfer the mixture from the blender.
- Add chicken to the sauce mixture (optional).
- Add 1 cup of the chicken liquid.
- Cover and simmer until chicken is tender.
