Applesauce Cake
- 2 c. sifted all-purpose flour
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 3/4 c. seedless raisins
- 3/4 c. chopped walnuts
- 1/2 c. soft shortening
- 1 1/2 c. canned applesauce
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1 1/2 c. sugar
- 2 eggs
- Sift together flour, soda and salt.
- Combine raisins and nuts and toss with 2 tablespoons of flour mixture.
- Beat together shortening and spices.
- Gradually add sugar and beat until fluffy. Add eggs, one at a time, beating well after each addition.
- Add flour mixture and applesauce, beating only until smooth.
- Stir in raisins and nuts.
- Grease Bundt or 3-quart ring mold.
- Bake at 350u0b0 for 1 hour.
- Cool in pan 15 minutes.
- Remove cake from pan and place on rack until cold.
- Makes 8 to 10 servings.
- Dust with confectioners sugar or use cream cheese frosting, if desired.
