Kimpira-Gobo(Sauteed Burdock Flavored With Soy Sauce; Very Good)

  1. Wash burdock root and scrape off the thin, brown skin with back of knife.
  2. Cut into 2-inch matchsticks.
  3. Soak in water immediately to prevent change of color.
  4. Pare carrots and cut into strips of the same length and thickness as the burdock.
  5. Roast sesame seed in a dry skillet over low heat, stirring constantly to prevent burning.
  6. When seed begins to pop, transfer to dry bowl.
  7. Soak dried red pepper in water to soften.
  8. Cut in half and squeeze out seed under water; chop finely.
  9. Drain burdock and pat dry with paper towel.
