Chocolate Velvet Cake
- 1 1/2 c semisweet chocolate morsels
- 1/2 c butter softened
- 1 (16 oz) box light brown sugar
- 4 large eggs
- 2 c all purpose flour, sifted 3 times
- 1 tsp baking soda
- 1/2 tsp salt
- 1 (8 oz) container sour cream
- 1 c hot water
- 2 tsp vanilla flavoring
- Melt chocolate in microwave in bowl about 1 1/2 minutes. Stir until smooth.
- Beat butter and sugar at medium speed until well blended-about 5 minutes.
- Add eggs 1 at a time, beating just until blended after each addition.
- Add melted chocolate, beating until blended.
- Sift together flour, baking soda and salt.
- Sift 3 times.
- Gradually add 1 cup hot water in a slow stream.
- Beat just until blended, stir in vanilla.
- Spoon into 3 greased and floured 8 inch round cake pans.
- Bake in 350 degree oven for 25 to 30 minutes.
- Cool in pan for 10 minutes-remove from pans and let cool on wire rack.
