L.A. Dirty Rice
- 1/2 c. chopped celery
- 1/2 c. chopped fine carrots
- 1/2 c. chopped scallions or onion
- 1/2 lb. thinly sliced beef
- kielbasa sausage
- 1/4 c. chopped fine bell peppers
- 4 strips bacon
- small can sweet peas
- 2 c. uncooked rice
- garlic powder
- seasoned salt
- pepper
- onion powder to taste
- paprika
- chopped parsley (for top when finished)
- Cook rice per directions.
- Set aside.
- Fry bacon strips on medium heat and remove from pan.
- Leave drippings in pan.
- Add sausage and stir until heated.
- Add remaining ingredients, except peas.
- Saute until tender and hot.
- Turn off heat.
- Add cooked rice to ingredients, folding rice until completely mixed.
- Add peas, folding gently.
- Add additional seasonings, if desired.
- Top with paprika and parsley for color.
- Crumble bacon strips on top.
- Eat! Serves 6.
