Mandarin Pork Roast
- 3 to 4 lb. boneless pork loin roast
- 1 tsp. salt
- 1/4 tsp. pepper
- garlic powder
- 2 Tbsp. Dijon mustard
- 1 can mandarin oranges
- 1/4 c. cider vinegar
- 1/2 c. chicken broth
- 1/4 c. brown sugar
- 1 Tbsp. soy sauce
- 1/2 c. water
- 2 Tbsp. cornstarch
- 1 medium onion, chopped
- 1/3 c. green pepper, chopped
- Sprinkle roast with salt, pepper and garlic powder.
- Spread mustard over roast.
- Cover with foil tent (do not seal completely) and bake at 325u0b0 until tender, approximately 2 to 3 hours.
- Drain oranges.
- Save liquid and mix with next six ingredients.
- Cook, stirring constantly, until smooth and thick.
- Add onion, pepper and oranges.
- Spoon over roast and bake at 400u0b0 for 30 more minutes.
