Cauliflower And Peas With Curried Almonds
- 1 large head cauliflower
- 1 (10 oz.) pkg. frozen peas
- 2 Tbsp. butter, divided
- 2 Tbsp. all-purpose flour
- 1 1/2 c. sour cream
- 1 tsp. onion salt
- 1 tsp. curry powder
- 1/2 c. slivered almonds
- Cook cauliflower 10 minutes.
- Cook peas according to package directions.
- Melt 1 tablespoon of butter over low heat; add flour, stirring until smooth.
- Cook 1 minute.
- Add sour cream; cook until well heated.
- Combine vegetables, sour cream mixture and add onion salt.
- Mix well.
- Spoon into lightly greased 1 1/2 quart casserole.
- Melt rest of butter in saucepan; stir in curry powder and almonds.
- Cook over medium heat, stirring until almonds are golden.
- Spoon over cauliflower.
- Bake at 325u0b0 for 25 minutes.
