Chicken Spaghetti Royale
- 1/4 c. butter or margarine
- 1/4 lb. fresh, sliced mushroom pieces, drained
- 1 medium onion, diced
- 1 medium green pepper, diced
- 1 Tbsp. chopped parsley
- 3/4 tsp. thyme
- 1/4 c. flour
- 2 c. chicken broth or 1 (16 oz.) can chicken broth
- 3 to 4 c. diced, cooked chicken
- 1 (4 oz.) jar diced pimento, drained
- 2 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 1 (8 oz.) pkg. spaghetti
- 1 (10 to 11 oz.) can Cheddar cheese soup (undiluted)
- Melt butter or margarine; add mushrooms, onion, green pepper, parsley and thyme; cook until vegetables are tender.
- Blend in flour, soup and salt, stirring until thickened.
- Add chicken, pimentos and lemon juice and keep at serving temperature.
- Prepare spaghetti as directed; toss with chicken mixture and serve.
- Makes 8 to 10 hearty portions.
- Good with green salad, garlic bread and light dessert.
