K'S Baked Cauliflower
- 1 head fresh cauliflower, cut into small pieces or 2 (10 oz.) pkg. frozen
- 1 stick margarine
- 1 1/2 tsp. white flour
- 3/4 c. milk
- 8 oz. sharp cheese, grated
- 1/4 tsp. black pepper
- salt to taste
- 1/4 c. sour cream
- 1 thinly sliced green bell pepper
- 2 eggs
- 1 tsp. Italian bread crumbs
- Preheat oven to 350u0b0.
- Boil cauliflower; drain and set aside. In a saucepan, melt margarine and gradually add flour and milk, stirring constantly.
- Slowly add cheese, pepper, salt, sour cream, green pepper and cauliflower.
- Mix well and cool.
- Beat 2 eggs and add into cauliflower mixture.
- Grease a 9 x 11-inch baking dish. Pour mixture into dish and sprinkle with bread crumbs.
- Cover lightly with foil and bake 30 minutes.
- Remove foil and bake 15 minutes more or until golden brown.
- Serves 6 to 8.
