Fiesta Pork Bake
- 6 boneless pork chops
- 2 Tbsp. margarine
- salt and pepper to taste
- 1 (1 3/8 oz.) pkg. dry onion soup
- 1 large green pepper, chopped
- 1 c. uncooked rice
- 1/2 c. catsup
- 1 tsp. Worcestershire sauce
- 2 c. boiling water
- 1 c. (1/4 lb.) shredded Cheddar cheese
- Coat a shallow 2-quart casserole with melted margarine. Sprinkle chops with salt and pepper; arrange in casserole.
- Top with soup mix, green pepper and rice.
- Combine catsup and Worcestershire sauce; spread over rice.
- Gently pour in boiling water.
- Cover and bake at 350u0b0 for 55 or 60 minutes, until done. (Additional 1/2 cup of water may be added if casserole becomes too dry.)
- Remove from oven; top with cheese.
- Cover and allow to stand 10 minutes.
- Serves 6.
