Turkey Chili(Heart Healthy Cooking)
- 2 Tbsp. diet margarine
- 2 lb. ground turkey
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 cloves garlic, minced
- 1 (16 oz.) can low-sodium whole tomatoes (undrained)
- 1 (10 oz.) can tomatoes and green chilies (undrained)
- 2 c. low-sodium tomato juice
- 2 to 3 Tbsp. prepared mustard
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 (15 oz.) cans kidney/pinto beans, drained
- Saute onion, green pepper and garlic in margarine in Dutch oven.
- Add turkey and cook until it loses pink color.
- Stir in remaining ingredients, except beans. Bring to a boil, cover, reduce heat and simmer one hour.
- Stir in beans, cover and simmer an additional 15 minutes.
