Wild Horse Barbecued Beans
- 1/2 lb. salt pork, cut into 1/2-inch cubes
- 1 onion, diced
- 1 (40 oz.) can pork and beans
- 1/4 c. dark molasses
- 1/4 c. brown sugar
- 1 Tbsp. yellow prepared mustard
- 1/4 tsp. ground ginger
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground cumin
- 1 to 4 jalapeno peppers, minced
- 1/2 c. bottled barbecue sauce
- salt to taste
- Fry salt pork over medium heat.
- When it is rendered but not yet crisp, add onion and cook until onion is soft.
- Drain canned beans of excess liquid and combine them with salt pork, drippings and onion.
- Stir in molasses, brown sugar, mustard, ginger, cayenne pepper, cumin, jalapeno pepper and barbecue sauce.
- Pour into earthenware pot or casserole.
- Stir in extra chunks of already barbecued meat, if desired.
- Bake uncovered 1 hour.
- Serves 6 to 8.
