Crock-Pot Beef Fajitas
- 1 1/2 lbs flank steaks
- 1 onion, sliced
- 1 tablespoon cilantro
- 1 teaspoon ground cumin
- 8 ounces chopped tomatoes
- 4 ounces chopped green chilies (small can)
- 1 green pepper, sliced
- 1 red pepper, sliced
- 2 garlic cloves, minced
- 1 teaspoon coriander
- 1/4 teaspoon salt
- Tortillas
- 12 flour tortillas
- Toppings
- sour cream
- guacamole
- shredded cheddar cheese
- salsa
- Cut steak into 6 portions and place in crock pot. Add remaining ingredients. Cover and cook on low for 8-10 hours, or on high 4-5 hours. Remove meat and shred using a fork to pull meat into stringy pieces. Return meat to pot and stir to blend.
