Fiesta Brunch Casserole
- 4 (8-inch) flour tortillas
- butter flavored vegetable cooking spray
- 1 (15 oz.) can chili (no beans)
- 3 medium potatoes, drained and peeled
- 1 c. chopped tomato
- 4 eggs
- 1/2 c. chopped green onion
- 1/2 c. shredded cheese
- 1 c. salsa (optional)
- Heat oven to 400u0b0.
- Spray both halves of tortillas with cooking spray.
- Place 2 tortillas into each of 2 loaf pans, gently shaping each into a "bowl".
- In a medium saucepan heat chili. Stir in potatoes; cook until thoroughly heated.
- Divide chili mixture among tortillas.
- With back of spoon make an indentation in each chili mixture.
- Break egg into each indentation.
- Bake 10 minutes.
- Cover loosely with foil.
- Bake 5 to 10 minutes longer or until eggs are done.
- Gently lift out of pans to serving plates. Spoon on tomato and onions.
- Sprinkle with cheese.
- Serve with salsa (optional).
