Savory Broccoli Quiche
- 1 single pastry crust
- 1 medium bunch broccoli, chopped (2 c.)
- 2 to 4 Tbsp. butter or oleo
- 1 medium onion, chopped
- 3 Tbsp. nutritional yeast (available in health food store)
- 4 eggs, beaten
- 1 1/2 c packed grated Gruyere cheese
- 1 1/2 c. milk
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1/4 tsp. cayenne
- Preheat oven to 400u0b0.
- Bake pastry crust for 8 to 10 minutes. Steam broccoli until tender; drain.
- Saute onion and butter over medium heat until golden brown.
- Add nutritional yeast; mix well. Simmer at low heat for 5 minutes.
- Remove from heat and cool slightly.
- Place onion mixture on bottom of prebaked crust. Sprinkle with 3/4 grated cheese.
- Top with broccoli.
- Combine remaining ingredients.
- Pour over broccoli.
- Bake at 450u0b0 for 15 minutes.
- Reduce heat to 350u0b0.
- Add rest of cheese.
- Bake for 30 minutes.
