Sweet Potato Pie
- 4 medium size sweet potatoes, cooked until soft, then peeled
- 3 eggs, lightly beaten
- 1/2 c. sugar
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. salt
- 1 1/2 c. light cream
- 1 tsp. grated lemon peel
- 4 Tbsp. unsalted butter, melted and cooled
- 1 unbaked 9-inch pie shell, chilled
- Preheat oven to 400u0b0.
- Put the sweet potatoes in a large mixing bowl and mash with a wooden spoon or a potato masher.
- Set aside.
- Combine the eggs, sugar, spices, salt, lemon zest and cream in a small bowl; whisk until combined.
- Pour this mixture into the sweet potatoes; stir until thoroughly combined.
- Add the butter; mix well.
- Pour into the pie shell and bake for an hour, or until filling is set and a knife inserted in the center comes out clean.
- Let cool completely before slicing.
