Sweet Potato Pie

  1. Preheat oven to 400u0b0.
  2. Put the sweet potatoes in a large mixing bowl and mash with a wooden spoon or a potato masher.
  3. Set aside.
  4. Combine the eggs, sugar, spices, salt, lemon zest and cream in a small bowl; whisk until combined.
  5. Pour this mixture into the sweet potatoes; stir until thoroughly combined.
  6. Add the butter; mix well.
  7. Pour into the pie shell and bake for an hour, or until filling is set and a knife inserted in the center comes out clean.
  8. Let cool completely before slicing.
