Berry-Melon Salad
- 1/2 c. unsweetened orange juice
- 1/3 c. unsweetened grapefruit juice
- 3 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 2 tsp. vegetable oil
- 2 tsp. honey
- 1 tsp. poppy seed
- 2 medium cantaloupes
- 2 c. sliced fresh strawberries
- 2 c. honeydew melon balls
- Combine juices, cornstarch, vegetable oil and honey in a saucepan, stirring well.
- Cook over medium heat, stirring constantly until thickened and bubbly.
- Stir in poppy seed.
- Cover and chill thoroughly.
- Peel cantaloupes and cut each melon into four 3/4-inch slices.
- Place slices on individual salad plates. Combine strawberries and honeydew melon balls.
- Spoon 1/2 cup strawberry mixture over each cantaloupe slice.
- Spoon poppy seed mixture evenly over fruit.
