Broccoli-Onion Quiche
- 1 (9-inch) pie crust (deep dish frozen is good)
- 1/4 c. Parmesan cheese (divided in half)
- 2 1/2 c. fresh broccoli
- 1 to 1 1/2 c. sherdded Colby cheese (Swiss or Cheddar may also be used)
- 1/4 to 1/2 c. chopped onion (according to taste)
- 3/4 to 1 c. half and half
- 2 to 4 Tbsp. chicken broth or bouillon
- 1/2 c. sour cream or sour slim if watching weight
- 1/2 tsp. salt or to taste
- 4 to 5 eggs
- dash of baking powder
- dash of pepper or Tabasco (if desired)
- Prick pie crust and bake 5 minutes at 450u0b0.
- Sprinkle with 2 tablespoons Parmesan cheese.
- alternate layers of broccoli pieces and grated cheese-onion mixture.
- Beat eggs and all other remaining ingredients together and pour over broccoli-cheese mixture.
- Sprinkle with rest of Parmesan.
- Bake at 450u0b0 for 10 minutes; reduce heat to 325u0b0 and bake 20 minutes more or until set.
