Macadamia Nut And White Chocolate Cookies
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 sticks unsalted butter, softened
- 1 c. packed light brown sugar
- 2 large eggs, at room temperature
- 1 tsp. vanilla extract
- 12 oz. white chocolate, cut into 1/4-inch chunks
- 1 1/2 c. Macadamia nuts, coarsely chopped
- 3/4 c. granulated sugar
- Position rack in center of oven and preheat oven to 350u0b0. Cover 2 baking sheets with parchment paper or aluminum foil.
- In medium bowl, sift together flour, baking soda and salt.
- In large bowl, beat butter for 30 to 45 seconds with electric mixer; set on low.
- Butter should be creamy.
- Gradually add sugars to batter and beat at medium speed for 1 to 2 minutes or until mixture is light and fluffy.
- Add eggs, 1 at a time, beating well between each addition.
- Add vanilla.
- Using wooden spoon, stir in flour mixture.
- Add chocolate chunks and nuts; stir until well combined.
